Bibingka: The Sweet and Savory Filipino Classic

What is Bibingka?

  • Bibingka is a rice cake made from rice flour, coconut milk and water. The cake batter is poured into a pot lined with banana leaves before being cooked. This dish is often served with butter, sugar and grated coconut. Grated cheese and sliced salted egg may also be added as a topping.


How to make a Bibingka?

Ingredients:

  • 2cups/320 grams rice flour

  • ½cup/55 grams glutinous rice flour

  • 1tablespoon baking powder

  • 1teaspoon salt

  • ¾cup/150 grams granulated sugar

  • ⅓cup/76 grams unsalted butter, melted, plus more melted butter for topping, and butter for greasing pan

  • 1½cups/355 milliliters coconut milk

  • 3eggs, lightly beaten

  • 1banana leaf (optional)

  • 1salted duck egg, sliced (optional)

  • 1cup/80 grams grated queso de bola or Cheddar cheese

  • ½cup/52 grams grated coconut for topping (optional)


Equipment's

  • Large bowl

  • Whisk

  • Oven

  • Skillet pan

  • Banana Leaves


Instructions

  1. Line each pan with Banana leaf then grease with melted butter. Set aside.
  2. For the Bibingka mixture: Sift together All Purpose flour, Rice flour, Sugar and baking powder. Add in the Evaporated milk, melted Margarine, eggs and grated Eden Cheese. Mix until blended.

  3. Pour Bibingka mixture onto the prepared pans. Top with sliced Salted Egg.

  4. Steam for 15-20 minutes or until the center is firm. Let it cool.

  5. Slightly grill the bottom part over low flame. 

  6. Brush with melted margarine then top with Eden Cheese strips.
